*UPDATE* to my 30 Day Weight Gain Challenge:
It’s been 11 days since my initial announcement and happy to say up I am up 1.5lbs……….BOOM
Now onto the Meal Prep!
Shopping List was only 4 ingredients:
2 – Tomato Sauce $1.80/each
2 – Brown Rice Pasta $2.00/each
3 – Edamame $1.80/each
3 – Tofu (High Protein) $2.50/each
Total comes out to $20.50
There’s only 1……………….Boil Pasta…………and DONE…lol
Seriously, boil the pasta, scoop out 1/2 cup edamame, 1/5 portion tofu, 1/4 cup sauce and 1 cup of pasta and your meal prep for the week is done.
I surprised myself on how quickly this was done. I think this post will take longer than the actual cooking. (yup)
The longest part of this meal prep was waiting for the water to boil 3 min, during the time the pasta was cooking (8min) I was able to cut the tofu, plate the edamame and tofu. In the last 3min I was able to plate the pasta/sauce.

Macros: Protein 28%, Fat 13%, Carbs 58%
If you’ve read my previous blog posts I cover my morning/night shakes and snack. I’m keeping those the same until I get more creative (or sick of it!)
My snack (toast/avocado) is about 300 calories, Shake 745 calories x 2. Adding the 950 calories from my 2 meals a day above, I’ll be at 2740 calories, this keeps me on track for +1lb every 7 days. 19 more days to go! Stay tuned.
